This delicious vegan curry can be made in 15 minutes or less!
Ingredients
Instructions
- Chop onions and garlic, as well as any other veggies you want to add. Cook in a large pan on medium heat for 2-3 minutes.
- Drain chickpeas and add them to the pan along with the cayenne, coriander, cinnamon, cumin, and turmeric. Cook for a minute.
- Add the coconut milk, reduce heat to low, and simmer until thick. Up to 5 minutes. Serve over rice or on its own while still warm. Enjoy!
